Fig Bites

Fig Bites

Our neighbors have a huge fig tree and so each July - August, we are lucky enough to have a ton of figs! We will be attempting to transplant this tree over to our yard this fall so fingers crossed I don’t kill it and ruin the supply. This year we’ve made fig salads, fig pizza, fig smoothies, chocolate dipped figs, and now fig bites.

These are so easy and then make a quick snack during the week. Each “bite” is actually 2 bites so if you prefer a straight bite, make them half the size in the recipe. They have the oat taste with layers of sweet fig with a bright hit of lemon. Perfect summer snack!


Fig Bites

10-12 bites

 
  • 3/4 cup old fashioned oats

  • 1/4 cup almond slices

  • 1/2 cup pecans

  • 5oz fresh figs (~6 figs), stem removed

  • 1/2 tsp grated lemon peel

  • 1/4 tsp sea salt

  • 1 scoop collagen (optional)

  • 1 TBS Sesame seeds


  1. Add oats, almonds, pecans, lemon peel, figs, collagen if using, and salt in a food processor

  2. Blend until smooth consistency forms. Depending on how large your processor is, you may need to stop and scrape down the sides.

  3. Use a cookie scoop (about 1.5 TBS) to divide the mixture.

  4. Roll into balls using your hands (they will be sticky)

  5. Sprinkle out the sesame seeds and roll each bite around on the seeds to lightly coat

  6. Place bites on parchment paper on a plate and put in freezer for 15-20 minutes

  7. Store in an airtight container in the fridge or freezer for up to a week.


Speed it Up

  • Put the sesame seeds in with everything else. They will be stickier than if you roll on

Tips

  • If you keep them in the freezer, plan to give it 5 minutes once you take them out before you bite in.
