Bahn Mi Breakfast Bowl with Cilantro Sauce

One of my favorite local sandwich shops is Bahn Bon Mi and the flavors are always so incredible! I was inspired to do a bowl with similar flavors: a hint of curry, bright colorful veggies, and a punch of cilantro. I call this a breakfast bowl because I cracked an egg on top but you can eat it for lunch or dinner.


Bahn Mi Breakfast Bowl with Cilantro Sauce

2 servings

 
  • 5 baby red potatoes (the golf ball sized ones, not the super tiny ones. Double if using the real tiny ones and don’t quarter them)

  • 1 tsp olive oil

  • 1/4 tsp ground pepper

  • 1/4 tsp ground ginger

  • 1/8 tsp kosher salt

  • 1/2 lb ground beef

  • 1/4 tsp hot curry powder

  • 1/4 tsp garlic powder

  • 1/2 TBS soy sauce

  • 3 cups chopped red cabbage

  • 1/2 tsp olive oil

  • 1/2 tsp kosher salt

  • 1 cup packed baby kale

  • 2 medium carrots

  • 1/3 cup packed cilantro

  • 1/4 cup Greek yogurt

  • 1/2 TBS apple cider vinegar

  • 1/2 TBS water

  • 6-10 slices cucumber

  • 2 eggs


  1. Quarter each potato into wedges

  2. Toss in 1 tsp olive oil, 1/4 tsp ground pepper, and 1/4 tsp ground ginger

  3. Cook in the air fryer for 15 minutes at 400. (Use a skillet or the oven to cook and crisp if you don’t have an air fryer)

  4. While potatoes cook, slice red cabbage and place in medium bowl

  5. Drizzle with 1/2 tsp olive oil and 1/2 tsp kosher salt. Massage and set aside

  6. Chop kale and massage until starting to soften. (It shouldn’t’ take long to soften baby kale)

  7. Slice or shave carrots (your preference)

  8. When Potatoes are Done: Sprinkle 1/8 tsp kosher salt over the potatoes immediately after cooking

  9. Heat a skillet over medium and add 1/2 lb ground beef, 1/4 tsp hot curry powder, 1/4 tsp garlic powder, and 1/2 TBS soy sauce until cooked

  10. Blend together 1/3 cup packed cilantro, 1/4 cup Greek yogurt, 1/2 TBS apple cider vinegar, 1/2 TBS water

  11. Slice cucumber

  12. Cook eggs over-easy in skillet (with butter or an oil) until cooked to your preference.

  13. Assemble bowl with softened cabbage, kale, carrots, and cucumber. Add meat and potatoes. Top with egg and cilantro sauce


Speed it Up

  • Buy prepared cabbage and kale

Prep in Advance

  • Blend the cilantro sauce and save in the fridge until eating

  • Prep all ingredients except for the potatoes, meat, and eggs. This will make it very fast to prepare
