Stuffed Dates - Two Ways

I’m always on the hunt for a delicious but easy to make snack. I get cravings in the afternoon for just a little something. Dates two ways give the sweeter and the savory options covered.


Peanut Butter Stuffed Dates

9 dates

  • 9 pitted dates

  • 2 TBS natural crunchy peanut butter (or almond butter)

  • 1 TBS vanilla whole greek yogurt

  • 2 TBS chocolate chips (dark or semi-sweet)

  • 1/4 tsp ghee

Tools: parchment paper

  1. Expand the opening of dates and set on parchment paper on a plate or tray that will fit in your freezer

  2. Mix 2 TBS peanut butter and 1 TBS yogurt

  3. Scoop out the peanut butter mix and stuff each date

  4. Pop the plate of dates into the freezer for 15 minutes

    • If you don’t want to add chocolate to this treat, add sea salt now and keep in the freezer 30 minutes before covering

  5. In a small bowl add 2 TBS chocolate chips with 1/4 tsp ghee. Microwave in 10 second increments for 40 seconds, stirring each time. It should be fully melted at the end of the 40 second stir

  6. Take dates out of the freezer and add melted chocolate to one end of each date. Top with sea salt

  7. Put back in the freezer for another 15 minutes.

  8. Now they are ready to eat! Store on parchment paper in a sealed container in the freezer for up to a week.


Goat Cheese Stuffed Dates

9 dates

  • 9 pitted dates

  • 2 oz goat cheese

  • 9 pecans

Tools: parchment paper

  1. Expand the opening of dates and set on parchment paper on a plate

  2. Chop pecans and mix with the goat cheese (alternatively you can keep separated and just top with pecan)

  3. Stuff the dates with the goat cheese

  4. Add to a covered container and keep in the fridge for up to a week
