Build a Hummus Bowl

Hummus as a meal. Yes, you can.

The cauliflower in the hummus bulks up the base and with the freedom of toppings, you can create the flavors you are craving. A great lunch option or even breakfast! High quality olive oil makes the dish and if you have time, homemade naan puts it over the edge.


Build a Hummus Bowl

 

Hummus Base:

  • 1 can chickpeas, drained and rinsed

  • 1 1/2 tsp minced garlic (~3 cloves)

  • 1/4 cup tahini

  • 1 TBS olive oil

  • 1/2 tsp lemon peel grated

  • 1 TBS lemon juice

  • 1 cup chopped cauliflower, then heated for 1 min in the microwave

  • 3/4 cup water

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/4 tsp ginger

Topping Options/Ideas:

  • Olive Oil

  • olives

  • cashews

  • Roasted chickpeas

  • Cumin

  • Paprika

  • Arugula

  • Spinach

  • Parsley

  • Sundried tomatoes

  • Roasted red peppers

  • Red pepper flakes

  • Cucumber

  • Red onion

  • Cherry Tomato

  • Extra Garlic

  • Pita/Naan bread

 
  1. Chop the cauliflower and cook in the microwave for 1 minute to soften

  2. Blend hummus ingredients, including cauliflower in a food processor until smooth. Add addition water if needed to get the right consistency

  3. Top hummus in a bowl with olive oil and whatever combination of ingredients speak to you.
