Build a Hummus Bowl
Hummus as a meal. Yes, you can.
The cauliflower in the hummus bulks up the base and with the freedom of toppings, you can create the flavors you are craving. A great lunch option or even breakfast! High quality olive oil makes the dish and if you have time, homemade naan puts it over the edge.
Build a Hummus Bowl
Hummus Base:
1 can chickpeas, drained and rinsed
1 1/2 tsp minced garlic (~3 cloves)
1/4 cup tahini
1 TBS olive oil
1/2 tsp lemon peel grated
1 TBS lemon juice
1 cup chopped cauliflower, then heated for 1 min in the microwave
3/4 cup water
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp ginger
Topping Options/Ideas:
Olive Oil
olives
cashews
Roasted chickpeas
Cumin
Paprika
Arugula
Spinach
Parsley
Sundried tomatoes
Roasted red peppers
Red pepper flakes
Cucumber
Red onion
Cherry Tomato
Extra Garlic
Pita/Naan bread
Chop the cauliflower and cook in the microwave for 1 minute to soften
Blend hummus ingredients, including cauliflower in a food processor until smooth. Add addition water if needed to get the right consistency
Top hummus in a bowl with olive oil and whatever combination of ingredients speak to you.
