Buffalo Lettuce Cups

We are wrapping up July! I can not get over how strange this summer has been. Normally we have parties, BBQs, and group beach events all summer. None of that has happened this year with the exception of a few socially distanced gatherings.

If you want to feel like you are at a party, you should make these Buffalo Lettuce cups. Quick and easy to come together and end up with some delicious bites that are fully of veggies. They can be created for a light lunch or maybe an afternoon snack when dinner will be later. Increase the buffalo and hot sauce for a bigger punch.


Buffalo Lettuce Cups

Makes 10-12 lettuce cups

 
  • 1 cup cauliflower rice

  • 1/2 pound ground meat (chicken, lamb, beef, or turkey)

  • 1/2 tsp minced garlic

  • 1/2 tsp hot sauce

  • 1 tsp ACV

  • 2 TBS Buffalo sauce

  • 1.5 oz mozzarella

  • 1 head Bibb Lettuce

 
  1. Rice cauliflower until reaching 1 cup riced

  2. Add 1/2 pound ground meat to a sauté pan over medium high heat

  3. Season meat with 1/2 tsp hot sauce, 1 tsp apple cider vinegar, and 1/4 tsp salt

  4. When meat is browned, turn down the heat to low and add 1/2 tsp minced garlic and 2 TBS Red Hot Buffalo Wing sauce and stir.

  5. Cook for 5 minutes to combine flavors

  6. Season cauliflower rice with 1/4 tsp pepper and steam in the microwave for 1 minute

  7. Shred or slice 1 1/2 oz mozzarella

  8. Assemble lettuce wraps by laying out 10-12 Bibb lettuce cups, cauliflower rice, ground meat, and top with mozzarella
