Amped Up Meal: Healthy Choice Chicken Marinara Power Bowl

This is a fun series where I buy some of the more high quality packaged food and then make it an actual meal. This provides a fast way to get dinner on the table without sacrificing taste and quality. If you have any other brands I should amp-up, please let me know!

This week I’m sharing a Healthy Choice meal. There seems to be a ton of variety of this brand in my grocery store so I wanted to AMP one up!

  • Fat: 18g

Amped Up Meal: Healthy Choice Chicken Marinara Power Bowl

1 serving

  • 1 Healthy Choice Chicken Marinara Power Bowl

  • 4-6 leaves fresh basil

  • 1/4c + 1/8c broth

  • 1/4 c quinoa

  • 1 cup spring mix

  • 5 cherry tomatoes, sliced

  • 1 egg

  • 1 tsp olive oil

  • 1/2 tsp Italian seasoning

  • 1/8 tsp red pepper flakes

  • salt and pepper to taste

Tools: skillet, microwave, sauce pot


  1. Heat broth and quinoa and half of the basil in a sauce pot on high heat. When it starts to boil, turn it down to low and simmer for 15 minutes.

  2. Plate spring six, sliced cherry tomatoes, and remaining basil

  3. Heat Healthy Choice meal according to package

  4. Cook 1 egg over easy in a skillet with a 1tsp oil and season with Italian seasoning, red pepper flakes and salt and pepper.

  5. Add cooked quinoa to your spring mix plate, add the healthy choice meal, and top with egg

  6. Serve immediately
