Amped Up Meal: Amy's Mexican Casserole
This is a fun series where I buy some of the more high quality packaged food and then make it an actual meal. This provides a fast way to get dinner on the table without sacrificing taste and quality. If you have any other brands I should amp-up, please let me know!
Amy’s Mexican Casserole bowl by itself is 380 calories and after I’m done with the additions, it’s up to 655-714 depending on how you top it.

Amped Up Meal: Amy's Mexican Casserole
1 serving
1 Amy’s Mexican Casserole bowl
1 chicken thigh (5oz raw)
1/3 cup chopped red bell pepper
1/4 avocado
1/2 medium vine ripened tomato
6 leaves romaine lettuce
1/4 cup chopped cilantro
1/2 tsp cumin
1/4 tsp garlic powder
dash of cayenne pepper
Tools: skillet, microwave
Chop red bell pepper, tomato, romaine, cilantro, and slice avocado
Heat oil in skillet and sear the chicken thigh on both sides, add the red bell pepper, cover and turn down to low. Cook for 8-10 minutes or until chicken is fully cooked. Set aside to rest.
Cook Amy’s Mexican Casserole according to package
Slice the chicken in strips
Plate the casserole on top of the romaine, and then add the chicken, bell pepper, tomato, and avocado. Sprinkle over the cilantro.
Serve immediately
