Amped Up Meal: Amy's Mushroom Risotto
This is a fun series where I buy some of the more high quality packaged food and then make it an actual meal. This provides a fast way to get dinner on the table without sacrificing taste and quality. If you have any other brands I should amp-up, please let me know!
Amy’s Mushroom Risotto bowl by itself is 230 calories which I don’t consider a meal at all. After I’m done with the additions, it’s up to 461.

Amped Up Meal: Amy's Mushroom Risotto
1 serving
1 Amy’s Mushroom Risotto bowl
1 Gilbert’s Tuscan Chicken Sausage Link
4 oz mushroom blend (shitake, oyster, bella)
2 cloves garlic, minced
1/2 TBS butter
1/4 tsp dried sage
1/4 tsp sea salt
1/4 tsp pepper
1/2 TBS balsamic vinegar
Fresh Basil
Tools: skillet, microwave
Heat a skillet with 1/2 TBS butter on low
Chop mushrooms into preferred size and add to skillet along with minced garlic
Add the sage, sea salt and pepper to the mushrooms
While mushroom cook, follow the heating instructions for Amy’s bowl.
Cut the Gilberts sausage into slices and based on preference, either heat in the microwave or add to the skillet to warm with the mushrooms (if you have an airfryer, they are excellent toasted for 8 minutes on 400)
Once the mushrooms are cooked and have released their liquid, add the balsamic vinegar, stir and remove all from heat.
Mix Amy’s bowl and Gilberts. Fold in the mushroom mixture and top with fresh basil
