Pistachio Pesto Blueberry Goat Cheese Turkey Bacon Sandwich
Well this one is a mouth full to say but I couldn’t leave out any of the amazing pieces of this sandwich! My mom text me a picture of a similar vibe sandwich a few weeks ago and I’ve been contemplating the flavors to try something of my own.
The arugula, basil, and pistachio pesto bring a nice earthly herb flavor while the fresh blueberry whipped up with goat cheese gives you that sweet touch and the bacon hits you with the salt. The turkey and bagel round out the sandwich making this the ultimate summer bite!
Pistachio Pesto Blueberry Goat Cheese Turkey Bacon Sandwich
2 servings
1/3 cup pistachios
3/4 cup packed arugula
1/4 cup packed basil
2.5 TBS olive oil
1 TBS lemon juice
2 oz plain goat cheese
1/3 cup fresh blueberries
8-10oz deli turkey
4 slices cooked bacon
2 bagels of your choice (I used the thin everything bagels)
Tools: Food Processor or blender
Remove the pistachio shells to get 1/3 cup. Pulse in the processor until chopped small
Add arugula, basil, olive oil and lemon juice to the processor and blend until nearly smooth (there will still be some pistachio pieces visible). Scoop out and set aside
Rinse out the processor fully, then blend the blueberries and goat cheese until fully whipped. (If you decide to forego the bacon, I recommend adding 1/2 - 1 tsp sea salt to this blend)
Assemble your sandwich:
Spread the pesto out on the bottom of the bagel (warmed if you choose)
Top with bacon, then turkey
Add the goat cheese mixture before adding the bagel top.
Slice and enjoy!
