Spicy Chicken Bacon Wrap

I’ve started to see back to school photos which usually means the flexibles summer schedules are coming to an end. A little more structure to finish homework and fit in extracurricular activities might mean less time to cook. While I don’t have kids, I don’t actually spend all my free time cooking so an easy meal during the week is key! I’ve been making a habit of using part of my lunch to read so the faster the meal, the more time to enjoy a book. I’m currently reading Beneath A Scarlet Sky by Mark Sullivan and it is excellent!

A spicy chicken bacon wrap hits the spot and is incredibly fast with a little advanced preparation. Cook the chicken in advance or use chicken from left over roasted or rotisserie. Make a big batch of rice for the week, using a little in this wrap and then as a side for other lunches or dinners during the week. Bacon can be cooked in advance and as long as you have willpower not to eat it (sometimes I don't), this wrap is a 10 minute meal!

Spicy Chicken Bacon Wrap

Serves 2

  • 1/4 cup cooked jasmine rice

  • 1/3 cup greek yogurt

  • 1/4 tsp dill weed dried

  • 1/8 tsp garlic powder

  • 1/4 tsp kosher salt

  • 1/2 tsp olive oil

  • 1 1/2 tsp water

  • 3 pieces of bacon, cooked

  • 1 cup cooked chopped chicken

  • Chipotle Peppers in Adobo sauce (Use 1 TBS sauce and 1-2 peppers from the can)

  • 1/3 cup Arugula

  • 4 8-inch tortillas or 2 12-inch tortillas (or wrap of choice)

  1. Make the homemade ranch by mixing greek yogurt, dill, garlic powder, kosher salt, olive oil, and water. Place in fridge until ready to eat.

  2. Chop up cooked chicken into bite sized pieces or shredded

  3. Combine chicken and 1 TBS Adobo sauce to a bowl

  4. Dice 1-2 chipotle peppers (based on your spice level) and mix in with the chicken

  5. Crumble the cooked bacon

  6. Warm rice in skillet or microwave

  7. Warm chicken in skillet (you can do this in the microwave but it tends to dry out chicken so if microwave is your only option, add an extra 1/2 TBS Adobo sauce to mixture)

  8. Assemble wraps by splitting the rice, arugula, bacon, and chicken between tortillas. Roll like a burrito or just straight across without folding in the ends.

Preference: either drizzle the homemade ranch in before rolling or dip as you eat.
