Homemade Easy Baked Beans

This new year is full charge ahead! It may also be the coldest winter in Charleston since I’ve been here. I won’t complain too much but we have had too many days below average for my comfort.

These baked beans pair perfectly with any grilled or smoked meat. You can easily double or triple the recipe to have leftovers.


Easy Baked Beans

2 servings

  • 1/4 cup diced onion

  • 2 TBS deli mustard

  • 1/2 TBS tomato paste

  • 2 tsp minced garlic (3-4 cloves)

  • 1 tsp paprika

  • 1/2 tsp salt

  • 1/2 tsp red pepper flakes

  • 1 can of pinto beans

  • 3 slices thick cut bacon

  • 2 TBS Worcestershire sauce

  • 1 TBS apple cider vinegar

  • 2 tsp honey

  • 1/4 cup coffee

  • 1/4 cup broth

Tools: strainer for the beans, oven-safe deep skillet


  1. Drain and rinse the pinto beans, set aside

  2. Preheat oven to 350 degrees

  3. Cut bacon into tiny pieces and cook on high in an oven-safe deep skillet

  4. Set the cooked bacon to the side and drain all but 1 tsp of the bacon grease

  5. Add the diced onion and cook for 3 minutes

  6. Turn down the heat to medium low, add the garlic, tomato paste, mustard, paprika, salt, and red pepper flakes. Stir and toast for 2 minutes.

  7. Turn off the heat and stir in the Worcestershire sauce, apple cider vinegar, coffee and broth.

  8. Smooth out the beans, then drizzle the honey over the top and sprinkle on the bacon pieces

  9. Bake at 350 degrees for 25 minutes
