Baked Mac n Cheese

Work has been so chaotic time has flown by and I just realized July is next week!! My parents are coming in town for the 4th and I haven’t even thought about what I want to do with them or gotten their room ready. Hopefully you are more prepared for July than I am!

If you are looking for a good side to pair with your pull pork or brats over the holiday weekend, look no further. This should satisfy any Mac & Cheese fan with a crisp cheese top and a creamy center. If you are really against baked mac and cheese, you could skip that step all together but I don’t recommend it. This recipe has a lot of flexibility if you want a certain type of pasta (white, whole wheat, gluten free, etc.) or if you want to mix up the types of cheeses. You could easily make this a little more filling by adding in some andouille sausage or chicken (make sure you cook before hand and mix it in with the pasta). I’ve included broccoli to get a little more veggie intake without ruining the dish (think broccoli cheddar soup). Let me know what you think!


Baked Mac n Cheese

Serves 4 as a side


  • 8oz Pasta (I used a multi-grain blend)

  • 2 TBS butter (I use vegan butter)

  • 1/4 Large Onion, chopped (~ 1/2 cup)gr

  • 1/2 TBS minced garlic

  • 3/4 cup cheddar grated

  • 1/2 cup gruyere grated (or other white cheese)

  • 1 1/2 cup milk (any kind but I use cashew)

  • 1 cup chopped broccoli

  • 1/4 tsp black ground pepper

  • 1/4 tsp sea salt

  • 1/8 tsp red pepper flakes (optional)

  • dusting of paprika (optional)

  • 6 cherry tomatoes, sliced

  • 1 TBS grated parmesan

 
  1. Cook pasta according to instructions on the box (to the lower end of time)

  2. In a sauce pan melt butter over low heat

  3. Add chopped onion (~ 1/2 cup) and minced garlic. Cook on low for 5 minutes

  4. Add 1 1/2 cups milk and increase heat to medium, warming slowly for 5 minutes

  5. Add grated cheese 1/4 cup at a time, whisking into the milk until melted

  6. Whisk the seasoning into the sauce

  7. Preheat oven to 350

  8. In a 8x8 dish or small dutch oven, mix cooked pasta and broccoli

  9. Pour cheese over the pasta

  10. (At this point, you can cover and leave in fridge until ready to eat if making ahead)

  11. Place in oven for 15 minutes

  12. Add grated parmesan and cherry tomatoes on top of the pasta

  13. Cook for an additional 15 minutes

  14. Rest for 5 minutes before serving
