Easy Pasta Salad

A massive heat wave swept over the city this weekend which put a damper on a few of outdoor activities but we were still able to get to the pool and out in the kayaks. While it’s easy to use a holiday weekend as an excuse to eat out, grilling at home can be cheaper and better tasting! We ate hot dogs pool side, breakfast burritos, homemade pizza and wings, and brisket with friends. The sangria at the pool and the strawberry basil margaritas we made at home were a lot cheaper than the $7-9 a glass you’ll find at a restaurant. I am the first to admit that it is easy to go out on the weekend but as much as I love cooking, I still eat out too often. My personal goal is to reduce our restaurant visits as we’ve gotten a little lazy the last few months.

One benefit of eating at home is the leftovers! Many sides that go well with burgers, ribs or any grilled meat also make great leftovers. While you can enjoy sides fresh on the weekend, its an easy add to Monday’s lunch! This pasta salad is no exception. I recommend adding in a little extra olive oil to the leftovers to keep the pasta moist.


Easy Pasta Salad

4 side servings


  • 1/2 Orange Bell Pepper, diced

  • 1/2 Cup Spinach, chopped

  • 2 tsp Italian seasoning

  • 1/2 box pasta

  • 4 artichoke hearts, chopped

  • 1 TBS artichoke heart juice

  • 8 green olives, chopped

  • 1/4 cup tomatoes, chopped

  • 2 TBS Olive Oil + 1 1/2 tsp for each leftover serving

  • 1/2 tsp salt

  • 1/2 tsp black pepper

 
  1. Cook pasta according to package

  2. Drain and rinse pasta under cold water

  3. Place pasta in large bowl and toss with Italian seasoning

  4. Chop bell pepper, spinach, artichoke hearts, olives, and tomatoes

  5. Mix all ingredients in the bowl with the pasta

  6. Add an additional Olive Oil if storing in the fridge overnight or for any leftovers to retain moisture
