Breakfast Hash

There was an arugula shortage and I felt it deeply. I pleased to announce that after several weeks of going to multiple stores and eventually succumbing, replacing it with romaine or spring mix, arugula is back! Please mark this happy time with me by adding a little to a meal this week - salad, sandwich, eggs, and pizza are all acceptable. While a loss of arugula for a few weeks was incredibly impactful to me (#firstworldproblems), I would like to recognize there are many things more important than arugula.

My youngest brother ended up in the hospital this past weekend and for several days afterward. I am grateful he has a support system of family and friends nearby to help him through his time in the hospital and recovery afterward. I am thankful he is young and healthy or the outcome would’ve been much worst. While we can’t turn back time to stay young forever, we can make sure our health is a priority. A car wreck, slip on the stairs, or the flu can catch us when we least expect it. If we are maintaining our bodies through exercise, nutritious food, and mindful movement, we will recover faster.

To end on a lighter note, here is a suggestion on how you can add a little arugula to your mornings. As you top this delightfully cheesy breakfast with my favorite green, take a moment to be thankful for someone you love.


Easy Breakfast Hash

Serves 2

  • 2 medium potatoes

  • 1 TBS coconut or olive oil

  • ½ bell pepper, chopped

  • ¼ tsp salt

  • ¼ tsp pepper

  • 2 links chicken sausage, sliced

  • 2 eggs

  • 1 TBS milk

  • Shredded cheese (optional)

  • 1 cup Arugula / Spinach mix


  1. Chop potatoes and cook in sauté pan in oil over medium low heat covered for 10 minutes (until potatoes are starting to become tender)

  2. Turn up heat and add in chopped bell pepper, salt and pepper for another 5 minutes

  3. Add sliced Chicken sausage links and cook another 5 minutes (potatoes should be completely tender and browned before moving forward)

  4. Beat eggs and milk in a bowl

  5. Pour over the potato hash and stir until eggs are cooked

  6. Add cheese, cover, and turn off heat while cheese melts

  7. Add spinach and arugula mix when serving
