BBQ Stuffed Sweet Potato with Ranch
Last Saturday was the first day of Summer and we are only a few days away from July. While this isn’t a typical summer, we tend to stay outdoors longer which makes easy weeknight dinner important. A stuffed sweet potato is the perfect way to get a filling dinner without too much effort!
BBQ Stuffed Sweet Potato with Ranch
Serves 2
1 large chicken breast
1 tsp BBQ seasoning
1 tsp ground coffee
2 TBS BBQ sauce (homemade option here)
1/3 cup Greek yogurt
1/4 tsp dill
1/8 tsp garlic powder
1/4 tsp sea salt
2 large sweet potatoes
1/2 cup shredded cheddar cheese
Optional additional toppings: butter, banana peppers, lettuce or spinach, pickles
Mix the yogurt, dill, garlic powder and sea salt for the ranch dressing. add water until desired consistency is reached. Optional: add a mix of water and hot sauce for a spicy ranch
Cook 2 large sweet potatoes in the microwave until soft. Oven roasting is an option but it will take a lot longer
Cut chicken breast into bite size pieces and coat with coffee and bbq seasoning
Cook the chicken in a skillet over medium heat until done, 8-10 minutes (cut a bigger piece in half if you are worried and want to check)
Toss the chicken in 2 TBS BBQ sauce.
Open the hot potatoes, adding butter if you wish.
Split cheese, chicken, and any remaining toppings (lettuce, spinach, banana peppers, pickles) between the two potatoes.
Drizzle ranch on top and enjoy!
Speed It Up
Use store bought BBQ Sauce and Ranch (but check those ingredients)
Use leftover chicken

Make the BBQ sauce in advance and store in fridge
Make the ranch in advance and store in fridge
Cook the potatoes until almost done. Just reheat in a 450 oven or in the microwave to finish cooking and reheat
