Steak Sandwich

In the midst of the COVID-19 outbreak it seems people are either freaking out or aren’t worried at all. No matter what camp you are in, let’s remember a couple things:

  1. We should all be washing our hands thoroughly and often no matter what time of year it is or what virus is circulating.

  2. A healthy body is a stronger body. Keep up your normal exercise routine (wipe down that gym equipment) and fuel your body with the greens and protein it needs to stay strong. This is a good recommendation to help avoid or limit the effects of whatever your kid (or in my case, my friend’s kids) decide to wipe or sneeze on you.

While participating in a challenge at my gym, I realized I don’t get nearly enough protein. It caused me to rethink my meals and my snacks. At the very least, we should all be getting half our body weight of protein in grams (your weight x 0.5 = protein needs per day in grams). I challenge you to track your food for a few days and see if you are getting what you need. If not, making this steak sandwich might help! I pair it with sweet potato chips but fries would work as well. You can ditch the bread and increase the arugula to make it a salad if you or anyone in your life is avoiding bread. This is a simple sandwich with a ton of flavor.


Steak Sandwich

Serves 2

  • 12 oz sirloin steak

  • 1/4 small onion

  • 4 oz cremini mushrooms

  • 1/8 tsp kosher salt

  • 2 tsp olive oil

  • 1/2 tsp black pepper

  • 1 tsp kosher salt

  • 2.5 oz Gouda

  • 4 Slices Sourdough

  • 1 vine ripened tomato

  • 1/2 cup packed arugula

 
  1. Slice onion into thin strips

  2. In a sauté pan heat 2 tsp olive oil on low and add onion, cooking for 5 minutes

  3. Slice mushrooms and add to onion along with 1/8 tsp kosher salt

  4. Slice steak very thinly against the grain and top with 1/2 tsp black pepper and 1 tsp kosher salt

  5. Set mushrooms and onions aside and turn up heat to medium high

  6. Slice gouda and tomatoes

  7. Toast sourdough bread, topped with the gouda (so the cheese begins to melt)

  8. Sear the steak in the sauté pan

  9. Turn off heat and mix in the onions and mushrooms

  10. Assemble the sandwiches with the toasted sourdough, steak, mushroom, onion, arugula, and sliced tomatoes
