Blueberry Lemon Poppy Seed Salad
Holiday weekends, especially extra long ones, are wonderful but tiring. It is easy to end up forgoing the greens for easier options. Lemon and blueberry go well together and provide a beautiful contrast over the mixed greens. A delicious way to eat a few vegetables while still leaving room for the holiday BBQ (or whatever celebratory food you choose). Blueberry Lemon Poppy Seed Salad
Serves 2
1/4 tsp grated lemon peel
2 TBS lemon juice
1 TBS olive oil
1 TBS Coconut milk
1/2 tsp honey
1/2 tsp poppy seeds
6 cups packed spring mix
1/4 cup sliced almonds
1/2 cup fresh blueberries
2 TBS Goat Cheese
Whisk lemon peel, juice, oil, milk, honey, and poppy seeds together
Divide spring mix between two bowls
Top with sliced almonds and blueberries
Drizzle with dressing and sprinkle over goat cheese
