Garlic Rice & Sausage Bowl

I had a friend tell me that she doesn’t care to get to know her recipe blogger and hates the personal text before the recipe. Apparently it is too much reading (insert eyeroll). In her honor, for this recipe only, I have moved all notes to the bottom of the page.

Garlic Rice & Sausage Bowl

Servings: 4

  • 1 cup Jasmine Rice

  • 1 1/2 cup water

  • 2 TBS olive oil

  • 5 cloves minced garlic

  • 1 TBS lemon juice

  • 1 tsp sea salt

  • 4 Gilbert’s kale chicken sausages

  • 20 baby carrots cut into matchsticks. (about 1 ½  cup of matchsticks)

  • 1 cup cucumber matchsticks

  • 2 1/2 cups packed spinach, chopped

  1. Boil water in pan, turn down heat to low and add rice. Cook for 15 minutes

  2. Blend 2 TBS olive oil, 5 cloves minced garlic, 1 TBS lemon juice, 1 tsp sea salt

  3. Mix garlic blend in with the rice

  4. Chop carrots and cucumber into matchsticks

  5. Chop spinach into bite size pieces

  6. Slice Gilbert’s sausage into 1/4 inch circles

  7. If you prefer, toast sausage in pan until edges start to crisp. They are cooked, so this is entirely optional.

  8. Mix rice, spinach, carrots, and sausage

  9. Divide into four servings

  10. Mix in cucumber for a cool crunch right before eating and after re-warming

This rice and sausage bowl is a favorite of Brandon’s for lunch. The rice fills you up while still getting in some veggies. For easy meals I love Gilbert’s Chicken Sausage! No, this is not sponsored, although I wish it was. The flavors are always amazing and they come individually wrapped. This makes it incredibly easy for me to open just one without feeling like I have to come up with a use for all of them. I keep them in the freezer and then defrost the ones I need.

In other news, one of my dogs is slowly destroying her Christmas presents and I think she is doing it slowly on purpose. Each time the pieces get picked up, she decides its time to sit down and tear up a little more. It just doesn’t quite go for the décor I had in mind. Eventually I will have to throw out the toys while she isn’t watching. This time of year we are reminded why we don’t buy soft toys for our dogs. Anyone else feeling this pain?
