Air Fryer Carrot and Potato Fries

I’m coming off a long weekend with a good friend and it is rough to get back to work and routine. During the week I like to make sure I have a meal or two that comes together quickly and without much effort but especially after a busy weekend. I recommend pairing these fries with some baked chicken wings and a quick salad for one of those minimal effort meals.

I’ve heard there are people that “aren’t fry people”. * Gasp!* I actually know a couple of these unicorns and they eat side salads instead of fries. While this is a more nutritious choice, I personally love potatoes in any form. To help reduce the starch levels, I’ve been incorporating carrot fries as well. I’ll be honest, they aren’t quite as satisfying but they are good in a different way! I think they would be great if you cook a little extra to get them crispy and smother them with toppings. I may try that this weekend.


Carrot Fries and Potato Wedges

+ Garlic Ketchup and Spicy Coconut Milk Sauce

Makes 30 Carrot Fries & 20 Wedges

Ingredients:

  • 1 large russet potato (~8-9 inches)

  • 2 large carrots (~9 inches)

  • 1/2 TBS + 1 tsp olive oil

  • salt

For garlic ketchup

  • 1/4 cup ketchup

  • 1/2 tsp minced garlic

  • 1/4 tsp salt

  • 1/8 tsp garlic powder

For spicy coconut sauce

  • 1 1/4 tsp jalapeno sriracha (wild brine)

  • 1/8 tsp chili powder

  • 1/8 tsp salt

  • 1/4 cup coconut milk

 

Potato Wedges

  1. Boil potato for 15-20 minutes (may have to slice in half to fit but want to try to keep it whole)

  2. When the potato can be easily pierced but not too soft, drain water and set potato aside to cool

  3. Slice potato in half length wise. Then slice the two pieces in half width

  4. Slice the wedges so each 1/4 of potato creates 5 wedges

  5. Place potato in bowl and drizzle with 1/2 TBS olive oil and salt

  6. Cook in preheated air fryer at 400 degrees for 15 minutes, flipping half way through. You may have to do two batches depending on the size of your air fryer

Carrot Fries

  1. Peel carrots and cut off the top and bottom.

  2. Cut in half (~4 in length)

  3. Cut the smaller bottom pieces in half long wise

  4. Cut the larger upper pieces in thirds long wise

  5. Cut the fries out so they are similar thickness

  6. Toss carrots in bowl with 1 tsp olive oil and salt

  7. Cook in preheated air fryer at 375 for 15 minutes, flipping/shaking half way through


Sauces

  1. Mix ingredients for each sauce and use for either type of fry depending on preference. Or stick with traditional and just use ketchup.
