Fried Rice Egg Roll Bowl

I had a hard time coming up with a name for this as it is a combination of fried rice and egg roll in a bowl. I went with the obvious one but if anyone has a creative name, I’m not above renaming it.

I’ve included jasmine and cauliflower rice in the recipe but if you are avoiding rice, you could double up on cauliflower. I’ve made this with and without chicken sausage so feel free to adjust to fit your needs.

Speed it up:

  • Buy pre-riced cauliflower or broccoli to speed up this meal.

  • You can also buy microwave jasmine rice but I suggest making the rice ahead of time and having it ready in the fridge.

  • As suggested in the recipe, buy a bag of coleslaw mix that just includes green cabbage, purple cabbage, and carrots like the one pictured here. (*not an advertisement, just what they stock in my grocery store.)


Fried Rice Egg Roll Bowl - 30 Minute Meal

4 servings


  • 1 cup cooked jasmine rice

  • 1/4 cup chopped carrots

  • 1 bag coleslaw mix (14oz) - green and purple cabbage and carrot mix

  • 1 small jalapeno chopped (or red pepper)

  • 1/2 bell pepper

  • 2 Chicken Sausages (Gilberts Kale) sliced and quartered

  • seasame oil (cooking)

  • 2 tsp ginger

  • 1/4 cup peas (optional)

  • 1/2 head cauliflower, riced (1 cup riced)

  • 1 tsp minced garlic (2 cloves)

  • 2 TBS soy sauce (or substitute)

  • 3 eggs

  • Salt and pepper

  1. Chop ingredients and rice cauliflower

  2. Add 1 tsp Sesame oil to high sided pan over med-low heat

  3. Add carrots, jalapenos, bell pepper and garlic

  4. Cook for 10 min or until the vegetables start to soften

  5. Add coleslaw mixture, salt, pepper, ground ginger and cauliflower rice

  6. Stir and continue to cook for additional 5 minutes

  7. Turn up to high heat

  8. Add rice, soy, and chicken sausage and peas if using

  9. Stir while cooking until all ingredients are hot and combined.

  10. Turn off heat and push the mixture to the sides of the pan.

  11. Crack eggs in the opening of the pan and mix in the pan as it cooks over the residual heat

  12. Break egg up as it cooks (if stovetop cools off too fast, just flip the high heat back on and finish the cooking)

  13. Mix all ingredients together and serve
