When detoxing from the amount of sugar, cheese, and bread consumed over the last two weeks, a delicious salad is always a game changer. I have high expectations for salads now and this one hits the mark. It is incredibly easy to pull together but tastes amazing!
You can pair this with a sandwich or soup or steak for a lighter side. I’ve also made larger portions and had this as dinner. Bonus - if you have any remaining parties to attend, toast up wonton wrappers in a muffin tin and fill with salad. It’s an easy way to get some greens without finding a plate and fork.
Bacon, Lettuce, Tomato, Avocado Salad
2 Cups Arugula
2 Cups Spinach
4 Pieces Bacon (ensure this is sugar free)
1 Large Beefsteak Tomato
1 Ripe Avocado
1/8 Cup Olive Oil
1/8 Cup Apple Cider Vinegar
1 Lime, juice
Cook Bacon. This can be done on stove top, oven, or microwave
While Bacon is cooking, chop tomato
In small bowl, mix all dressing ingredients
When bacon is cooked, let cool on paper towels
Mix Arugula and spinach in large bowl. Depending on the size of the arugula and spinach, you may want to chop into bite size pieces
Cut the avocado, remove the seed and cut into bite sized pieces.
Cut bacon into pieces
Top arugula mix with tomato, avocado, bacon and pour over the dressing.
Note: you can add more bacon or a chicken sausage to the top if you want a heartier salad. This one is great for a light dinner or as a combo with a soup
