Apple Sage Soup
Hosting a dinner party is a wonderful way to spend an evening with a few friends. As the host you could choose to provide all courses and guests bring the wine or you could provide the main and have guests bring an appetizer and dessert. From personal experience, do not use this as an opportunity to experiment or “wing it”. Until you have been consistently successful at “winging it” for yourself, don’t try it out on friends. Use a tried and true or a recipe from a trusted source to ensure a successful, and tasty, event.
If you choose to take on all the cooking responsibilities, I recommend you prep as much as possible to make the evening fun and relaxing for all. This Apple Sage Soup is a perfect example! It provides a complex flavor but isn’t too heavy. Perfect for diary-free friends. Make this soup earlier in the day or the day before and just reheat it in a sauce pan before the event.
Apple Sage Soup
Makes 4 1/2 cups. Serves 2 as a side or 4 as a small appetizer
1 large Acorn squash (2 1/2 cups cooked soft squash)
2 large Gala apples (2 cups chopped)
1/2 oz fresh Sage leaves (loosely filled 3/4 cup)
3/4 cup broth
3/4 cup full fat coconut milk
3 TBS Butter (choose appropriately if avoiding dairy)
1/2 tsp garlic powder
1/2 tsp cinnamon
1 tsp oregano
1/2 tsp black pepper
1/2 tsp kosher salt
Slowly heat butter, apple, and sage in pot for 10 minutes on medium low
Split acorn squash in half, scoop out the seeds, spray with olive oil and dust with salt and pepper
Squash cut side down on a plate, add 2 TBS water and heat in microwave until soft (~10-12 min or more)
Using a spoon scoop out flesh of squash and add to the apple sage mixture.
Add garlic powder, cinnamon, oregano, salt and pepper. Stir and cook on medium low for another 10 minutes
Add the broth and coconut milk, stirring until blended and cook around 5 minutes
Using an immersion blender, blend all until smooth
Cook another 10 minutes until all components are hot. Taste and add additional salt or pepper as needed.
Serve as a side or appetizer.
Prep in Advance
This can be made in advance and reheated slowly in a pot before serving. Perfect for a dinner party!
