Adult Lunchables

As much as I love a dinner recipe, I am a snacker at heart. I could snack all day and just eat a light dinner and be happy. Since I work from home, I have easy access to my fridge to indulge my tendencies.

Unfortunately or fortunately, I’m attempting to straighten my teeth and I’ve realized my love of snacking is just slightly outpowered by my laziness. To avoid removing my Invisalign and brushing my teeth too many times each day, I’ve been forced to eat actual meals. Don’t worry, I’ve found a way to snack and eat meals: adult lunchables. All my snacks on one plate!

This post is less of a recipe and more inspiration. I’ve included a recipe for basic hummus and a tangy mustard sauce. I have included my recommendations within each meal but use your favorite cheese, crackers and chicken sausage. I highly recommend trying Gilberts Chicken Sausage! I have been buying Gilberts for over a year and love how they individually package each link. I keep them in the freezer and pull out the links as needed since they quickly defrost. As it is fully cooked chicken, you don’t need to cook at all before adding to your meal but I personally like a little crisp on the edge.

Adult Lunchable - 2 ways


Mediterranean Style:

  • 7 Olives

  • 1/4 cup Cucumber slices

  • 1/2 cup Carrot sticks

  • 1 link Chicken Sausage, sliced and seared, I recommend Gilberts Kale Chicken Sausage

  • 1 serving size Crackers of your preference. Firehook are my favorite

  • 6 slices Havarti Cheese

  • 1/2 cup Hummus

    • Blend 1 can chickpeas, 2 TBS Tahini, 1 TBS Lemon Juice, 3 tsp minced garlic, 1 TBS olive oil, and 1/4 cup water. (add more water as needed to reach desired consistency)

I have included recommendations on amounts of each item but as this is a snack plate, increase or decrease as you need for your appetite. The hummus recipe will make extra so you’ll have more to use throughout the week.


Sandwich style:

  • 4 large Lettuce cups

  • Mustard sauce (Mix 1 1/2 TBS Delicatessen style mustard, 1 tsp red wine vinegar, 1 tsp olive oil, 1/2 tsp honey)

  • 1/4 cup carrot slices

  • 1 serving size Crackers of your preference.

  • 6 slices Havarti Cheese

  • 1 link chicken sausage. I recommend Gilberts Kale Chicken Sausage, sliced and seared

I recommend adding ingredients to the lettuce cup, rolling up and eating along side a cracker.
