Arugula Power Bowl

Several years ago I became addicted to the power bowl from Crazy Bowls and Wraps and would go at least once a week for lunch. When we moved to Charleston I started making my own version primarily because Crazy Bowls don’t exist down here. At this point, I couldn’t tell you what is on their version because I keep tweaking the recipe to include the things I love.

Arugula Power Bowl

Serves 4


  • 1 Cup Uncooked Brown rice

  • 2 cups homemade broth (water works if you don’t have broth)

  • 4 Cups Arugula,

  • 1/2 red onion

  • 1/2 can black beans, drained and rinsed

  • 1 Avocado

  • 1 Carrots

  • 1 large Tomato

  • 1/2 TBS Penzy's fajita seasoning (or similar blend)

  • Crumbled Feta (Optional)

  • Lime


  • 1/2 cup Plain greek yogurt (there are almond milk versions if you are dairy free)

  • 1 TBS Franks hot sauce (more or less depending on how spicy you like it)

  • dash of dried dill

  • dash of salt and pepper

  1. Bring broth (2C) to a boil. (or water if you don’t have broth)

  2. Add rice (1C), turn down to a simmer and leave until cooked (about 45 min)

  3. While rice is cooking, prepare the other items

  4. Slice red onion into small strips (not sure how?, see this basics post)

  5. Open can of black beans, drain and rinse well, put in a microwave safe container

  6. Wash carrots and peel into strips

  7. Cut up 1 large tomato into bite size pieces

  8. Mix all dressing ingredients together in bowl

    • 1/2 cup greek yogurt, 1/2 TBS hot sauce, 1/4 tsp dill, salt and pepper

  9. When rice is cooked, fluff with a fork and mix in lime juice

  10. You can pause at this point until you are ready to eat

  11. Top beans with Penzy's fajita seasoning and microwave for 15 seconds, stir and repeat so beans are warm but not about to burst

  12. Cut avocado into bite size pieces

  1. Place rice in bottom of salad or pasta bowl (you can do it on a plate too but I prefer to keep it all contained)

  2. Top rice with arugula

  3. Add warmed beans, carrots, tomato, onion and avocado

  4. Top with feta

  5. Serve with sauce on the side and add as you eat
