Sweet Potato Dahl

A friend recently connected me with a new spice company. Located in North Carolina, Mamma T’s Southern Indian Spices, is a fairly new company but their flavors are phenomenal! They sent me two of their spices to try out. I had plans to make this Sweet Potato Dahl for the blog and I swapped out the seasoning I usually use with the Original. Wow! It was better than my original recipe! I highly recommend checking out Mamma T’s and making this dahl as soon as possible. Stay tuned for another recipe in collaboration with Mamma T’s!


Dahl

4 servings

  • ½ cup diced onion

  • ½ cup chopped bell pepper (~1/2 of a pepper)

  • 3 cloves minced garlic (1 1/2 tsp)

  • 1 tsp olive oil (for cooking)

  • 2 1/2 cups chopped sweet potatoes

  • 1 1/2 TBS Momma T’s Original Masala

  • 1/2 tsp salt & pepper

  • ¾ cup Lentils

  • 2 cups Broth

  • 1 can tomatoes (14.5oz)

  • 1 cup chopped Spinach, loosely filled

  • 3/4 cup coconut milk

  • 1 TBS lemon juice

  • 1/4 cup cilantro (topping)

  • flatbread (optional)

  1. Cut onion and bell pepper.

  2. Place over low heat with 1 tsp oil and garlic.

  3. Cook for 5 minutes

  4. Chop potato into cubes and add to the onion mixture.

  5. Add Momma T’s Original Masala seasoning and stir to cover the potatoes

  6. Cook over med-low heat for 5 minutes.

  7. Add tomatoes, broth, salt, and pepper. Stir.

  8. Pour in lentils.

  9. Turn up the heat to medium and bring to a simmer

  10. Simmer for 25 minutes.

  11. Stir in coconut milk, lemon juice, cilantro and spinach.

  12. Cook for another 5-8 minutes until everything is warm and potatoes are soft.

  13. If desired, top with cilantro, and serve with flatbread
