Sparkling Ginger Mule
I hope everyone had a wonderful holiday spent with loved ones. This is first time in many years that I’ve gone back to work the day after Christmas. It is hard to get focused right after one holiday and another one right around the corner. I know this applies to food as well as work. I’ll have to do a grocery store run later today since my meal planning on went as far as Christmas dinner. I’m grateful I’ve planned out January’s meals and I won’t have to even think about! This week I went in a little different direction and created a drink. I love a Mexican mule but ginger beer is very high in sugar so I decided to make my own mule without any sugar. Sharp spice of the ginger, tart of the lime, smooth flavor of the mint and your favorite tequila.
Sparkling Ginger Tequila Mule
Serves 2
3 large limes
1 lime zest
Fresh Ginger root, washed and peeled
Mint leaves
1/2 cup water
3 oz tequila
10 oz club soda
In small sauté pan or sauce pan mix the zest of 1 lime, juice of 2 large limes, 1/2 cup water, and 8 slices of fresh ginger (1/4 in thick).
Bring to a boil, turn down heat, and simmer for 2 min.
Place mixture in a mason jar with 5 mint leaves and let infuse overnight in the fridge.
Strain the liquid and split between two glasses
To each glass add 1.5 oz (one shot) tequila, 5oz club soda, and 1/2 lime juiced with ice.
Garnish with additional mint leaves and lime if desired
