Salsa Verde and Homemade Chips
This past weekend was a flurry of activity between out of town visitors, Airbnb preparations, and an unexpectedly long trail run with friends. I like to be busy but I am ready to move on from the Airbnb work. We are still waiting for one more city inspection before we can finalize the space. Our first guest will arrive in just two weeks!
Chips and salsa are an easy buy at the grocery store but the homemade variety is the way to step up your game. As a side to taco night or an appetizer for a party, homemade chips and salsa verde are quick and flavorful. The recipe has chips for 2 people so double / triple as needed. The salsa recipe is about 1 1/2 cups so you can save the extra for later.
Salsa Verde and Homemade Chips
Chips for 2
5 tomatillos
2 jalapeños
1 bunch cilantro
1/2 diced onion
Garlic
1 tsp salt
4 tortillas (your choice of flour, corn, or alternative)
Olive Oil or Coconut oil spray
Salt for chips
Bring water to a boil
Peel tomatillos and add to boiling water
Cook for 5 minutes
Add peppers, cilantro, onion, garlic, salt, and tomatillos to food processor and blend until smooth
Transfer salsa to a container and store in fridge to cool until use
Stack 4 tortillas and cut into 1/8 ths
Preheat Air fryer to 400 degrees
Spray 16 wedges (1/2 of the chips) lightly with olive oil or coconut oil spray.
Add to the air fryer and cook for 4 minutes. Toss if needed, and cook an additional 1-2 minutes based on the color.
Dump out the chips, spray lightly with oil and toss with salt. (optional)
Repeat the steps with the remaining 16 chips
Serve chips with 1/2 cup salsa for 2 people. Keep remaining salsa stored in fridge for the future
