Green Breakfast Smoothie

I’m not a big breakfast person. Don’t get me wrong, I love breakfast food but I just don’t want it at 8AM during the week. I typically don’t eat anything until 9:30 or 10am and then it is usually a smoothie to hold me over until lunch. I’ve found a smoothie is a great way for me to eat some veggies without actually eating a salad for breakfast. You may think I’m crazy but breakfast smoothies are where I “hide” the vegetables that are good for you but I don’t prefer in my meals, like broccoli. Broccoli is high in fiber, vitamin C, vitamin K, iron, potassium, and protein but it is not my favorite. I don’t taste it at all after incorporating the fruit and nut butter. If you need to work up to the green-ness, just add an extra strawberry or two.


Green Breakfast Smoothie

For 2

  • 2 cup fresh spinach

  • 1 cup frozen chopped broccoli florets

  • ½ cup frozen blueberries

  • 5 large fresh or frozen strawberries

  • 3/4 cup water

  • 2 TBS Almond or Peanut butter

  • Optional: collagen 2 scoops

Dump all ingredients, except for the nut butter and collagen, into a blender and blend until smooth. Add the nut butter and collagen (if using) and blend again.

I like to separate the nut butter and collagen because they tend to stick to the sides if they are included in the first round.
