Fish Sheet Pan Dinner
I have been pressuring Brandon (my husband) to go fishing more to keep our freezer full. Our first year in Charleston, he went almost every week, but then he figured out how to surf. Let’s just say, fishing went to the back burner and now I have to guilt him into it. Luckily, he caught a few over the last two weeks so I didn’t have to buy a fish for this recipe. I know most people don’t have this luxury so I’ve included options for similar store bought options.
Fish Sheet Pan Dinner
2 servings
2 red potatoes
1/2 TBS Olive Oil
1 tsp Italian seasoning
1/2 tsp red pepper
1/2 tsp sea salt
1 small zucchini
1 small summer squash
1/4 tsp olive oil
1/2 tsp garlic powder
1/2 tsp black pepper
1-2 fish fillets (6-8oz total) - red snapper, tilapia, or flounder
1/4 tsp paprika (split in half if you don’t like spice)
1/4 tsp Italian seasoning
Fresh lemon
Heat oven to 400
Prepare a baking sheet with a liner or parchment paper
Chop 2 potatoes lengthwise, and then lengthwise again and then into 3-4 chunks.
Toss potatoes in 1 /2 TBS olive oil, 1 tsp Italian seasoning, red pepper, sea salt, and spread out on the baking sheet
Bake for 25 minutes
When there are 5 minutes left on the potatoes, slice and then quarter the zucchini and squash, pat dry and toss in the bowl with 1/4 tsp oil, garlic powder and pepper
Add the squash to the sheet pan spacing out as best as possible, pushing potatoes towards edge.
Cook additional 10 minutes
Pat fish dry and season with the paprika and remaining Italian seasoning
Add to the sheet pan in the middle
Cook 10 minutes
Squeeze fresh lemon juice over the fish then serve
